Homemade Nutter Butter Cookies 

Peanut Butter Cookies:
1/2 cup peanut butter
1/2 cup shortening, I use butter flavored
1/2 cup sugar
1/2 cup light brown sugar
1 egg
1 tsp vanilla
1/2 tsp salt
3/4 tsp baking powder
1/4 tsp baking soda
1 cup all purpose flour
To make Gluten Free sub these flours in 3/4 cup almond flour plus 1/2 cup tapioca flour

Preheat oven to 350 degrees F. Mix peanut butter, shortening, sugars, egg, and vanilla together. Blend baking powder, soda and flour together and add to peanut butter mixture. Line cookie sheets with parchment paper or foil. Shape cookie dough like peanuts, 1/2 inch by 1 inch, or into balls if desired. Bake for 15 to 18 minutes. Let cool completely. Fill with peanut butter filling and enjoy!

Peanut Butter Filling:
1 heaping Tbsp peanut butter
1 Tbsp shortening, I use butter flavored
1 cup confectioners’ sugar
4 tsp water

Mix together peanut butter, butter flavored shortening, sugar, blend well; add one teaspoon water at a time, until the right consistency, may not need all.
