Granny’s Sour Milk Griddle Cakes
1 ½ cups sifted flour
1 tsp. baking soda
½ tsp salt
1Tbsp. sugar
2 eggs
1 cup sour milk or buttermilk, see recipe below
1 Tbsp. melted shortening
Sift flour, baking soda, salt and sugar together. Beat eggs, stir in sour milk or buttermilk and shortening. Stir in flour mixture a little at a time, beating until smooth.
Drop onto a hot greased griddle with a large spoon. Cook until top is full of tiny bubbles and underside is golden brown. Turn with a spatula and brown other side. Makes 18 griddle cakes, depending on the size of spoon you drop with.
If you do not have sour milk or buttermilk make your own…
1 cup Sour Milk or Buttermilk
1 Tbsp vinegar or lemon juice + enough milk to measure one cup
Many recipes call for sour milk, sometimes as a substitute for buttermilk. Buttermilk and sour milk are slightly acidic and are required to balance the acidity in the recipe’s ingredients. Milk that has gone sour on its own is spoiled and is unsafe to use. To make 1 cup sour milk for baking, use 1Tbsp. vinegar or lemon juice and enough milk to equal 1 cup. Stir and let stand for 5 minutes before using. This will give the right amount of acidity for the recipe.
