Mango Kulfi aka Indian Ice Cream

 

1 Tbsp. unflavored gelatin

3 Tbsps. water

4 ripe mangoes

1/2 cup sugar

1 Tbsp. lemon juice

1  1/2  cup whipping cream, whipped stiff

Shelled roasted pistachios, ground for garnish

 

Mix together water and gelatin in a small saucepan.   Allow to soften for about 5 minutes then cook over low heat until dissolved.

 

Peel and remove pit from mangoes then puree in food processor or blender.   This should give you about 3 ½ cups puree.   In a large bowl mix mango, sugar, lemon juice and hot gelatin mixture; stir until sugar dissolves.   Let cool a bit.   Then fold in whipped cream.

 

Put the bowl in the freezer until mixture is half frozen; about an hour.   Remove from freezer and beat until smooth.   Pack into a bowl, molds or paper cups and return to freezer and freeze until about half frozen but still creamy.   Garnish with lots of ground pistachio nuts and enjoy!   Makes 6 one cup servings.
