BBQ Boneless Pork Ribs

4 to 5 lbs boneless pork ribs
BBQ Sauce for slow roasting:
1 white onion, chopped
1 cup celery, chopped
3 cloves garlic, minced
3 Tbsp olive oil
1 2/3 cup ketchup
1 cup water
1/2 cup cider vinegar
1/2 cup brown sugar
1/3 cup Worcestershire sauce
2 tsp chili powder
1/4 tsp cayenne pepper
1/2 tsp salt

Place boneless pork ribs in slow cooker (or roaster pan to cook in oven). Mix together BBQ sauce and cover pork ribs. Cover and cook slowly at 325 degrees F. for 3 hours, turn down to 250 degrees F. and cook 1 hour longer. Place on serving tray; let sit for 10 minutes. Serve.

BBQ Sauce for serving:
Cook onion, celery and garlic until soft in olive oil. Add cider vinegar, ketchup, brown sugar, Worcestershire sauce, chili powder, cayenne pepper and salt (no water necessary). Simmer 30 minutes or until desired thickness.
