Rosa Marina Fruit Salad aka Yankee Salad

16 oz. Rosa Marina Pasta aka Orzo
30 oz. canned mandarin oranges
16 oz. can pineapple chunks
16 oz. can crushed pineapple
4 oz. jar maraschino cherries
¾ cup sugar, granulated
2 eggs
3 Tbsp flour, all purpose or coconut flour to make gluten free
16 oz. whipped topping

Open mandarin oranges, pineapple chunks and crushed pineapple; drain and reserve juices in one bowl; set aside.

Open, drain maraschino cherries; cut cherries in half; set aside.

In a large pot bring to a boil water with a shake or two of salt. Drop Orzo into boiling water and cook through but still firm, stirring occasionally, about 10 or so minutes. Drain pasta; place in large mixing bowl. 

Add to cooked pasta mandarin oranges, crushed and chunky pineapple; add halved maraschino cherries.

Mix together reserved juices with sugar, eggs, and flour in medium saucepan over low heat; cook about 5 to 10 minutes, stirring often, until sauce thickens. Remove sauce from heat; let cool completely, about an hour.

Pour cooled sauce over orzo mixture, tossing to coat. Chill overnight in refrigerate. 

Next day fold in whipped topping. Chill and serve.
