Granny’s Cauliflower Melts
1/4 cup olive oil
1 tsp. garlic flakes
1 tsp. salt
1/2 tsp. pepper
Cauliflower, medium size head
1/2 cup golden raisins
1/4 cup white wine or water
1/4 cup pistachios, shelled and roasted
sourdough bread
4 oz. Pepper Jack cheese, cut into 8 slices
2 Tbsps. parsley, chopped
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Cut cauliflower into half inch thick slabs, halved to make a total of 8 slabs.
In a medium bowl, mix together olive oil, garlic, salt, and pepper. Toss in cauliflower slabs and turn to coat well. Arrange cauliflower on prepared baking sheet. Bake for 25 minutes, turn over cauliflower and bake another 10 to 20 minutes, until softened and well roasted. Remove from oven and set aside to cool.
While cauliflower is roasting soak the raisins in wine or water for 10 minutes then drain.
Chop the pistachios coarsely. Slice bread into 8 half inch slices. Place bread on prepared baking sheet and put cauliflower on top. Sprinkle with pistachios and hydrated raisins and top with cheese slices. Bake until the cheese melts, 7 to 10 minutes. Remove from oven and top with chopped parsley and serve immediately. Makes 8 toasts
