Chocolate Peppermint Cups

Chocolate Peppermint Cups


1 cup chocolate chips

1/3 Cup vegetable shortening
2/3 Cup confectioner’s sugar
3/4 teaspoon Peppermint Extract
Splash Vanilla Extract

Paper cup wraps


In a small saucepan melt ½ cup of chocolate over low heat, stir until smooth.   Remove from heat.   With a thin spatula brush melted chocolate evenly over the insides of paper cups.   Place paper cups in muffin tins to hold their shape.   Chill cups to harden faster.


Melt shortening over low heat until just melted.   Remove from heat, add in sugar and extracts, then stir together until smooth.   Spoon into prepared chocolate cups, be careful not rub the sides and melt the chocolate.   Chill in frig.


In the same small saucepan melt remaining chocolate, scrapping sides to get all chocolate melted.    Remove from heat and spoon chocolate onto filled cups and spread to the edges to fill in any gaps.   Chill and serve.
