Pork Roast in a Crock Pot

In a skillet over medium high heat brown Pork roast on all sides.

Place pork roast in Crock pot; add just enough water to cover bottom. Rub dried onions or place fresh sliced onions over the top of the roast. Add carrots and potatoes, optional.

Cook on high for about 30 minutes then reduce heat to low and cook the afternoon away or until pork roast starts to fall apart.

Remove veggies. Drain off most of the fat. In the skillet you used to brown the roast add enough water to remaining juice from roast to make about 1 ½ cups liquid. Put another ½ cup cold water a shaker with ¼ cup flour and shake well to blend…this can also be done in a bowl with a whisk. Stir water / flour mixture into pan juices and cook on the stove over medium heat, stirring constantly until gravy is thick and bubbly. Salt and pepper to taste. Reduce heat and simmer 2 to 3 minutes more. Makes about 2 cups gravy.
