Granny’s Chicken Fajitas


1 tsp. Chile powder

1 tsp. salt

1/2 tsp. ground cumin

1/2 tsp. onion powder

1/4 tsp. garlic powder

1 Tbsp. cornstarch

1/4 cup water

3 Tbsps. vegetable oil, divided

1 lbs. Skinless boneless chicken breast

3 bell peppers, green, yellow, red or orange

1 medium onion

2 Tbsps. fresh lime juice

8 flour tortillas

lime wedges for serving


In a bowl mix together chile powder, salt, cumin, onion powder, garlic powder, cornstarch, water and 2 Tablespoons oil.   Cut chicken breasts into ½ inch strips.   Add to spice mixture, stir to coat chicken completely.   Set aside.


Warm tortillas in a lowly heated oven.   Core sweet peppers, remove seeds and cut into thin strips.   Slice onion thin.*


In a cast iron skillet heat 1 Tablespoons oil.   Over medium heat cook onions and sweet peppers until crisp tender.   Remove from skillet and set aside.   Empty contents of the plastic bag into hot skillet and cook chicken through about 6 minutes, stir often, drain off marinade if desired.  Return onions and sweet peppers to skillet and stir all together well until heated through.   Remove from heat and stir in lime juice.


Transfer chicken and vegetables to a large bowl and serve with the warmed tortillas, lettuce, cheese, salsa, sour cream and lime wedges.   Makes 8 servings


*If serving for children, slice onion and chill in cold water, this takes the bite out a bit.   Then drain onion before cooking.


Variation: remove chicken from marinade after chilled for 30 minutes or so then cook as instructed above.
