Italian Donuts aka Ricotta Fritters

 

15 oz. ricotta cheese

4 eggs

1 Tbsp. vanilla or almond extract

1 ½ cups flour

½ cup sugar

2 Tbsps. baking powder

½ tsp. salt

Oil for frying

Powdered sugar or granulated sugar and cinnamon

 

In a large bowl beat ricotta cheese until smooth.   Beat in eggs and vanilla or almond extract.   Sift together flour, sugar, baking powder and salt; beat into batter until just combined.   Let batter rest for 30 minutes.

 

Heat oil into a heavy deep skillet to 365 degrees F.   Drop batter by teaspoon into hot oil and fry about 1 ½ minutes on each side or until golden brown all around.   Remove from oil with a slotted spoon and drain on paper towel.   Continue with remaining batter.   Let donuts cool completely.   Dust with powdered sugar or roll in granulated sugar or granulated sugar and cinnamon mixture.   Makes about 3 dozen donuts.   Enjoy!
