Healthy Pumpkin Cookies


Vegetable cooking spray

3/4 cup canned pumpkin puree

3/4 cup brown sugar, packed

1/2 cup plain yogurt

2 Tbsp vegetable oil

1 tsp vanilla

2 cups cake flour, sifted

1/2 tsp baking soda

1/2 tsp cinnamon

1/2 tsp salt

1/2 tsp ground ginger

1/4 tsp ground allspice

1 cup raisins


Preheat oven to 350° F.   Spray two baking sheet with vegetable cooking spray.   Cream together pumpkin puree, sugar, yogurt, oil, vanilla until smooth; mix together flour, cinnamon, ginger, allspice, baking soda, salt and stir into pumpkin mixture.   Fold in raisins.   Drop batter onto prepared baking sheets, 2 inches apart.   Bake 15 minutes, until golden, cool on baking sheet and then transfer to wax paper to cool completely.
