Granny’s Rum Raisin Oatmeal Cookies

Granny’s Rum Raisin Oatmeal Cookies


3/4 cup raisins

2 tsp rum extract

1 cup flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

large pinch nutmeg

2 Tbsp butter, soft

1/4 cup applesauce

1 egg

1/2 tsp vanilla extract

1/2 cup sugar

1/2 cup brown sugar

2 cups quick oats


Over medium low heat combine raisins and 2 Tablespoons water until warm, remove from heat add rum extract cover and set stand for at least 30 minutes.


Preheat oven to 375° F.   Line a baking sheet with parchment paper.


Whisk together flour, baking powder, baking soda, salt and cinnamon.   Cream together butter and sugars; beat in egg; beat in applesauce and vanilla.   Stir in flour mixture and oats until just blended.   Stir in rum raisin mixture.


Drop by Tablespoon onto prepared baking sheet and flatten cookie slightly.   Bake 9 to 12 minutes until edges are light brown.   Let cool a few minutes, transfer to wire cooling rack.   Makes 2 dozen
