Pumpkin Spice Fudge Cookies

Pumpkin Spice Fudge Cookies


1 cup flour

1/4 tsp baking soda

1/4 tsp salt

1 tsp pumpkin pie spice

1/4 cup butter, soft

7 Tbsp cocoa powder

2/3 cup sugar

1/3cup brown sugar

1/3 cup pumpkin puree

2 tsp vanilla

1/2 cup mini chocolate chips


Preheat oven to 350° F.    Line a baking sheet with parchment paper.


Whisk together flour, baking soda, salt and spices.   Over medium heat melt butter, remove from heat; whisk in cocoa powder and sugars.   Stir in pumpkin puree and vanilla until smooth.   Stir in flour mixture until completely blended; stir in chocolate chips.   Drop tablespoonfuls of batter onto prepared cookie sheet; press down slightly to flatten; cookies will not spread much.


Bake for 9 to 12 minutes or until set and slightly firm at the edges.   Cool on baking sheet for 3 to 4 minutes, and then transfer to wax paper to cool completely.   Makes 2 dozen
