Granny’s Pecan Tassies

 

1 cup flour

1/4 cup cornmeal

1/2 cup butter, soft

3 oz cream cheese, soft

 

Preheat oven to 350° F.   On wax paper, combine flour and cornmeal.   Beat butter and cream cheese until creamy.   Beat in flour mixture until crumbly.   Lightly knead dough until it holds together; shape into a ball.  Divide dough into 24 equal pieces.   Gently press each piece, with your fingers, evenly onto bottom and up sides of twenty four 1 3/4” by 1” non-stick mini muffin pan cups.   If you do not have non-stick pans lightly grease cups.

 

Filling

1/2 cup brown sugar

1/4 cup dark corn syrup

1 tsp vanilla

1 Tbsp butter, soft

Pinch salt

2/3 cup toasted pecans, chopped

1 large egg

 

Whisk together brown sugar, syrup, vanilla, butter, salt and egg until well blended.   Stir in pecans.  Spoon about 1 Tablespoon filling in each pastry cup.   Bake 25 minutes or until filling is set and edges of crust are golden.   Gently loosen Tassies from pans and transfer to cooling rack.   Enjoy!
