Lemon Blueberry White Chocolate Cookies

Lemon Blueberry White Chocolate Cookies

 

1 1/3 cup flour

1/2 tsp baking soda

1/4 tsp salt

1/3cup butter, soft

2/3 cup sugar

1 large egg

1 tsp lemon zest

1 tsp lemon extract or juice from half a lemon

3/4 cup white chocolate chips

3/4 cup sweetened dried blueberries

 

Preheat oven to 375° F.   Line baking sheet with parchment paper.

 

Whisk flour, baking soda and salt; set aside.

 

Beat together butter, sugar; beat in egg.   Add zest and lemon extract or juice and combine until smooth.   Stir in flour mixture until combined.   Mix in chips and blueberries.   Drop Tablespoons onto prepared baking sheet.

 

Bake 8 to 10 minutes or until edges are golden.   Transfer to wire racks to cool.   Makes 2 dozen
