Trout Almondine


6 Trout fillets or other white fish

salt and pepper to taste

1 cup milk

½ pound butter, 2 sticks

½ cup flour

¼ lb sliced almonds

3 Tbsp. lemon juice

Fresh parsley for topping, optional

Dip each fillet in milk, and lightly dust with flour seasoned with salt and pepper.   Melt butter in large skillet; brown fillets on both sides; remove fish; keep warm.

Add lemon juice and almonds to skillet; quickly bring mixture to a boil; stir constantly, scraping bottom of pan.   When almonds are golden, pour mixture over fillets and serve.
