Granny’s Potato Soup

Granny’s Potato Soup

4 lbs cubed potatoes, 4 large potatoes
1 cube butter, 1/2 cup
1 small chopped onion
4 stalks diced celery
salt and pepper to taste
water to cover
½ cup potato flakes or flour of choice
1 cup milk or cream

Fry bacon, crumble and set aside. Sauté onion and celery until tender in bacon fat.

Cover potatoes and spices with water; cook until tender; add onions, celery and butter; simmer for about 20 minutes or so.

If smooth soup is desired cook until potatoes are soft then mash until smooth. Blend flour or potato flakes and milk then add to soup stirring constantly until soup thickens.

Dish up soup, top with bacon and serve.

Variation: add carrots, peas, cheddar cheese, green peppers or corn. Use ham in place of bacon.
