Beer Batter Fried Fish
2 cups flour, divided
1 beer,12 oz.
1 egg
¼ tsp salt
3 finger pinch garlic powder, or onion powder, or paprika if you prefer.
Dash pepper
1 1/2 pounds cod fillets
Pour beer into a large bowl; gently whisk in 1 1/2 cups flour and egg until just combined; gently mix in spices.
Pat dry fish; sprinkle with salt and pepper; coat each fillet in beer batter. Then dredge beer battered fillets in remaining ½ cup flour.
Preheat oil to 375 degrees F.; gently add fish fillets; fry until golden in color, turning as needed until cooked through, about 5 minutes or so.
Drain on paper towel; keep warm in oven while remaining fillets are done. Repeat process with all fillets.
Serve hot with French fries and cole slaw….oh so good!
