2 Tbsp butter, divided
2 Tbsp olive oil, divided
1/3 cup minced onion
1/3 cup minced red bell pepper
1/3 cup minced celery
3 cups chopped cooked chicken
1 1/2 cups seasoned breadcrumbs
1/2 cup mayonnaise
2 large eggs, lightly beaten
1 Tbsp mustard
1 Tbsp lemon juice
1 Tbsp Worcestershire sauce
1/2 tsp salt
Pinch or a couple of shakes of each: paprika, onion powder, garlic powder, celery salt, cayenne pepper, oregano, thyme and cinnamon
Sauté onions, sweet peppers and celery in 1 Tbsp each olive oil and butter until veggies are tender, 4 to 6 minutes or so.
In a large bowl, combine the chicken, bread crumbs and cooked veggies. Set aside.
In a small bowl, combine the mayonnaise, eggs, mustard, lemon juice, Worcestershire sauce, and spices. Mix into chicken and for into about 10 patties. Let sit for about 10 minutes or so to set up.
Over medium heat fry patties in 1 Tbsp butter and 1 Tbsp olive oil until browned on both sides, about 3 to 5 minutes per side. Serve with your favorite Sauce or topped with sour cream. Enjoy!
