Hawaiian Coconut Cookies


1 ½ Cups MASECA® corn masa flour
1 ½ Cups Sweet grated coconut
¼ Tsp. Baking powder
2 Tsp. Ground cinnamon
½ Cup Sugar
⅔ Cup Melted butter
3 Tsp. Vanilla
3 Egg whites


Preheat oven at 350 degrees F.    Grease cookie sheet.

Mix MASECA®, grated coconut, baking powder, cinnamon, sugar, melted butter, vanilla and egg whites until a smooth even dough is formed. Divide dough into small portions and form little balls. Flatten each ball with your hand into your desired shape (triangles, hearts, circles, etc.).

Place cookies on a prepared cookie sheet and bake for 20 minutes. Let cookies cool completely.   May decorate with melted chocolate or dulce de leche  and top with additional grated coconut if desired.

Serve with hot chocolate, coffee or milk.
