Granny’s Cheddar Cheese Soup


4 1/2 cups potato, diced

3 cups onion, chopped

3 cups water

6 cups Chicken Broth

3/4 lb. Cheddar cheese, shredded

1 1/2 cups cream, half and half

Bacon, fried and chopped for topping

¼ lb. cheddar cheese, shredded for topping


Simmer potato, onion and water in covered kettle until vegetables are tender, about 10 minutes. Add chicken broth, cheddar cheese and cream.  Heat on low to medium heat until the cheese is melted.  Stir as needed.   Makes 12 Servings


This soup freezes well, just let cool completely and freeze in good portions for your family.   Then later defrost and heat to serve.
