Tortellini Salad

Tortellini Salad


9 oz tortellini or ravioli noodles, cooked

3 cups broccoli florets

1 cup sliced carrots

¼ cups sliced green onions

tomato, chopped

black olives

Ranch dressing or Vinaigrette, see recipes below


Cook pasta according to package directions.   Add the broccoli and carrots during the last 3 minutes of cooking.   Drain and rinse with cold water, drain again.   In large bowl combine cooked pasta mixture and green onions.   Drizzle with dressing and gently toss to coat.   Cover and chill overnight, minimum of 2 hours.    Just before serving stir in tomato.   If too thick thin with a little milk or water.



1 cup olive oil

½ cup cider or balsamic vinegar

1 tsp. sugar, optional

½ tsp. salt

½ tsp. celery salt

¼ tsp. dry mustard, optional if using balsamic vinegar

¼ tsp. red pepper

¼ tsp. garlic powder


Mix all well and refrigerate until needed.


Ranch Dressing:

1 cup Miracle Whip or 1 cup Mayo and ½ tsp sugar

1 cup buttermilk

1 tsp. salt

½ tsp pepper

½ tsp garlic powder

½ tsp onion powder

2 tsp parsley


Mix all well and store in frig.
