Brownies with Coconut Frosting

Bring to boil:
1 cup butter
1 cup water
2 Tbsp cocoa

Remove from heat. While this cools, mix in bowl:
2 cups sugar
1 tsp soda
2 cups flour
½ cup buttermilk
½ tsp salt
1 tsp vanilla
2 eggs

Preheat oven to 350 degrees F. Pour onto greased and floured 11×17 cookie sheet and bake for 20 minutes. Frost warm brownies, see recipe below; serve.

Coconut Frosting:

1 cup heavy cream or evaporated milk
1 cup granulated sugar or 1 ½ cups brown sugar, packed
4 egg yolks
1 stick butter, at room temperature, 1/2 cup butter
12 oz. grated or flaked coconut
1 1/4 cups finely chopped nuts, pecans, walnuts or almonds
1 tsp vanilla extract

Whisk together heavy cream, sugar and egg yolks in a heavy saucepan. Add butter; simmer over low heat stirring constantly until mixture thickens, about 13 to 15 minutes or so. Removed from heat; stir in vanilla, coconut and nuts; let cool slightly; frost warm brownies; serve. makes about 4 cups.
