Granny’s Beef Pot Roast

 

3 lb beef roast

1 onion, sliced thick

salt and pepper to taste

4 carrots, sliced thick

2 stalks celery or sweet peppers, sliced thick

½ cup hot water or so

1 pkg. dry onion soup mix, see recipe below

3 Tbsp. flour

2 lbs red potatoes

 

Brown roast on all sides in roasting pan on top of the stove, high heat.   Preheat oven to 350 degrees F.   Add water to roast, just enough to coat bottom of pan.   Roast beef for 1 ½ hours then add spuds.   Roast for 15 minutes and add carrots.   Roast for 15 minutes and add onions and celery on top of roast beef.   Roast for 45 minutes and take veggies out of roasting pan and set aside.   Place meat on platter.   In a jar mix ½ cup hot water and flour until well blended.   Pour into meat juices in roasting pan over a medium heat.   Cook until gravy thickens and serve.

 

Onion Soup Mix

3/4 cup instant minced onion
1/3 cup beef flavored instant bouillon
4 tsp. onion powder
1/4 tsp. celery seed, crushed
1/4 tsp. sugar

Mix all ingredients together well, and store up to 6 months in cool, dry place. Stir before each use.

Five tablespoons of the mix equals 1.25 oz. pkg. of purchased dry onion soup mix.

Variation:
For low sodium Onion mix use low sodium bouillon
For sodium free Onion mix use sodium free bouillon
