Granny’s Cream of Potato Soup Supreme

2 large baking size potatoes
½ cup diced onions or shallots
1 cup chopped celery
Salt and Pepper to taste
Water to cover
1 cup whole milk or heavy cream
½ cup butter, 1 stick
1 lb bacon
2 cups frozen peas
Shredded Pepper Jack cheese, optional

Fry bacon until crispy; set aside on paper plate.

Peel and cut potatoes into one inch cubes; put in large heavy pot or Dutch oven; add onions and celery; cover with water; add salt and pepper. Bring to a boil over medium low heat. Boil until all is tender, about 30 minutes or so; stir often.

Add cream and butter. Cut bacon into bite size pieces with scissors; add to soup; simmer until soup is thick; stir often.

Add frozen peas; simmer 20 minutes or so; stir often.

Serve hot; top with Pepper Jack cheese, option. Enjoy!
