Hot German Potato Salad

4 cups diced or sliced potatoes
6 slices bacon
1 cup onion, chopped
3/4 cup cider vinegar
1/4 cup water
2 Tbsp white sugar, optional
2 tsp salt
One pinch ground black pepper, about 1/8 tsp.
1 Tbsp chopped fresh parsley
1 Tbsp Chives

In a medium sauce pan cover potatoes with water; bring to a boil; reduce heat and simmer until potatoes are tender, easily pierced with a fork. Drain potatoes and aside to cool.

In large cast iron skillet, fry bacon over medium high heat, until browned and crisp, turning occasionally. Remove bacon to drain on paper towel.

Reduce heat to medium, add onion to bacon fat, cook until browned. Add cider vinegar, water, sugar if using, salt and pepper; bring to a boil. Add potatoes. Crumble half the bacon; add to skillet. Heat through and through. Place in serving dish, top with a remaining crumbled bacon, parsley and chives. Enjoy!
