Granny’s Dark Double Chocolate Cookies

Granny’s Dark Double Chocolate Cookies

1/2 cup butter, soft
1 cup sugar
1 egg
1 tsp vanilla
1 1/4 cups flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp instant espresso or coffee powder
1 1/4 dark chocolate chips

Preheat oven to 350° F. Grease or line baking sheet with parchment paper.

Cream together butter, sugar, egg, vanilla. Sift together flour, cocoa, baking soda, salt, espresso or coffee powder and gradually add to mixture. Stir in chocolate chips.

Drop onto prepared baking sheet 2 inches apart, bake 10 to 12 minutes. Cool for a few minutes on baking sheet, transfer to cooling rack. Makes 30 cookies.
