Crockpot Chicken Fricassee

 

1 can cream of chicken soup

1/2 soup can water

1/2 cup chopped onions

1 tsp lemon juice

1 tsp paprika

1 tsp rosemary

1 tsp thyme

1 tsp salt

1/4 tsp pepper

4 skinless boneless chicken breast

Olive oil or melted butter

 

Brush inside of Crockpot with olive oil or melted butter.   Place chicken in Crockpot.

 

Mix together cream of chicken soup, water, onions, lemon juice, and herbs and spices and pour over chicken. Cover and cook on low 6 to 8 hours.

 

1 hour before serving, prepare chive dumplings:

 

1 1/2 cups flour

2 tsp baking powder

3/4 tsp salt

3 Tbsp shortening

3 Tbsp fresh, chopped chives, or 2 Tbsp dried chives

3/4 cup skim milk

 

Mix together flour, baking powder, salt and shortening. Add chives and milk mix well. Drop by teaspoonful onto hot chicken and gravy. Cover and cook on high for 45 to 60 minutes.

 

Serve with mashed potatoes and vegetables, or over hot, cooked noodles or rice.

 

Variations: Add mushrooms, carrots, peas, broccoli or your favorite veggie.
