Granny’s Peach Crisp, Gluten Free

Granny’s Peach Crisp, Gluten Free
5 ½ cups sliced peaches
¼ cup sugar
2 Tbsp tapioca
1 Tbsp lemon juice
1 tsp almond extract

 

Toss together and place all in 9×9 baking dish.
Biscuit Topping:

1 cup flour, all-purpose gluten free
½ cup milk
1/3 cup oats, gluten free
¼ cup butter
2 tsp baking powder
1 tsp cinnamon
dash nutmeg

 

Blend together and crumble over top of peach mixture.

Bake cobbler at 375 degrees F for 30 to 40 minutes or until golden brown.

 

Variations:

Use rice flour

Use coconut  flour

Use coconut oil in place of butter
