Farmers Casserole

Farmers Casserole


6 cups of diced or shredded potatoes
1 ½ cups of shredded pepper jack cheese or cheddar cheese
2 cups  diced ham
½ cup sliced green onions
24 oz. of evaporated milk
4 eggs beaten
¼ tsp of salt
¼ tsp of black pepper.


Preheat oven to 375 degrees F.    Grease 9×12 casserole dish.


Place potatoes in prepared casserole dish. Top with ham, cheese and green onions.   Mix together well beaten eggs, milk, salt and pepper in a large bowl then pour over potato mixture.   Bake for 45 to 55 minutes or until knife inserted in the center comes out clean.  Remove from oven, let set for 5 minutes or so before serving.  Serve warm.   Makes 12 servings



Use any mixture of shredded cheese you desire.

Use Canadian bacon in place of ham.

Add chopped sweet peppers

Use 2 cups of egg beaters egg substitute in place of eggs.

Spice it up however you desire.
