Irish Soda Bread

3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup white sugar
1/2 to 1 cup buttermilk
1/2 cup raisins
2 eggs

Preheat oven to 350 degrees F (175 degrees C).

Combine flour, baking powder, baking soda, salt, and sugar. Beat eggs with buttermilk; add into the flour mixture; stir in raisins.

Pour dough onto lightly floured board. Knead 1 to 2 minutes. Shape into a round loaf, 6 ½ inches in diameter, adding flour if necessary. Place on greased cookie sheet. Cut an X shape about 1/2 inch deep through loaf with floured knife.

Bake at 350 degrees F (175 degrees C) for 1 hour or until the bottom of the loaf sounds hollow when tapped. Brush with soft butter.

Variations: Add cinnamon to the sugar before baking or different herbs and spices for a totally different flavor.
