Granny’s Zucchini Patties…A “Deedol” Original

2 eggs
1/2 cup sour cream or cream cheese
1/2 to a cup pepper jack cheese
1/2 cup bread crumbs or crackers, crushed
1/2 cup diced (finely) onion
2 cups shredded zucchini, with skins
Salt and pepper
1-3 tbsp. each butter and salad oil
sour cream and chives for topping

In a large bowl beat eggs with a fork or wire whip until well blended, then beat in sour cream, Pepper Jack cheese, bread crumb (I use Italian because I like a lot of flavor) and onion. Stir in zucchini until well combined. Season to taste with salt and pepper. Make into patties and let stand on wax paper for 15-20 minutes. You can cut the recipe in half.

In a 10-12 inch frying pan heat 1 tablespoon each of the butter and oil over medium high heat until butter melts. Drop zucchini patties into the pan and cook until golden brown on the other side, 3-4 minutes total. Offer sour cream and chives to spoon onto individual servings. Makes 15 cakes.

Variations: You can use other cheese like Parmesan or use crushed saltine crackers in place of bread crumbs, or use mayo and with a Tbsp lemon juice in place of sour cream. These are very good. I like to snack on them in-between meals.
