Granny’s After School Cookies

Granny’s After School Cookies


1 cup butter or shortening

1 cup creamy peanut butter

2 cup packed brown sugar

4 egg whites

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp. baking soda

½ tsp. baking powder

2 cup crisp rice cereal

1 ½ cups chopped nuts

1 cup flaked coconut

1 cup quick cooking oats


Preheat oven to 375 ° F.


In a large bowl, cream together butter, peanut butter and brown sugar until light and fluffy.   Beat in egg whites and vanilla.


In another bowl mix together flour, baking soda and baking powder; gradually add to creamed mixture and mix together well.   Stir in cereal, nuts, coconut and oats.


Drop by rounded Tablespoon 2 inches apart onto ungreased baking sheet.  Flatten with a fork.   Bake for about 8 minutes.   Makes 12 dozen



In place of nuts use raisins, dried cherries or cranberries

Use gluten free flour and oats to make gluten free
