Banana Oat Breakfast Cookie


Nonstick cooking spray or butter

1 large banana, mashed (1/2 cup)

1/2 cup chunky peanut butter

1/2 cup honey

1 tsp vanilla

1 cup rolled oats

1/2 cup flour (whole wheat, all-purpose, or rice)

1/4 cup dry milk

2 tsp cinnamon

1/4 tsp baking soda

1 cup dried cranberries or raisins


Preheat oven to 350 degrees F.   Lightly coat cookie sheet with cooking spray or butter; set aside.


Stir together banana, peanut butter, honey and vanilla.   Combine oats, flour, milk powder, cinnamon and baking soda and add to banana mixture.   Stir in cranberries.


Drop 1/4 cup of dough 3 inches apart onto cookie sheet…flatten each cookie mound to a 2 3/4 inch round, 1/2 inch thick.   Bake 14 to 16 minutes or until browned.   Transfer to waxed paper to cool immediately.   Each cookie will be about 4 inches around after baking….good size for a breakfast cookie.   Makes 12 cookies.
