2 sticks butter, soft
6 Tbsp sugar
2 cups flour
3/4 cups ground almonds
1/4 vanilla bean or 1 tsp pure vanilla extract
Preheat oven to 250° F. Grind almonds and vanilla bean in blender or food processor. Mix together butter and sugar (if using vanilla extract, add now) until creamy; beat in flour; stir in ground almonds and vanilla bean. Form dough into half-moons and bake for 1 hour; let set over night and the roll them in powdered sugar.
