Old-Fashioned Lemon Cake

Old-Fashioned Lemon Cake



1 cup butter

2 cups sugar, granulated

2 Tbsp lemon juice

4 eggs

3 cups flour

1 tsp baking soda

1 tsp salt

1 cup buttermilk or sour cream

sifted powdered sugar or lemon glaze, see below


Beat together butter and sugar until fluffy.    Beat in lemon juice.    Add eggs one at a time, blending well after each addition.   Combine flour with baking soda and salt.   Add to batter alternately with buttermilk, beginning and ending with flour.   Butter and flour 9×13 baking dish and pour in batter.


Bake at 350 degrees F. for about 1 ½ hours. Or until a pick inserted comes out clean.   Allow cake to stand 5 minutes and remove from pan and finish cooling on a rack.   Dust with powdered sugar or lemon glaze before serving.


Lemon glaze:

1 cup, heaping powdered sugar

1 ½ Tbsp lemon juice


Sift powdered sugar and blend in lemon juice to consistency desired.   Pour over cake before serving.
