Baked Sole

Baked Sole
1 lb sole filets
1 can cream of celery soup
½ cup cream
¼ cup sherry, or see variation below
2 Tbsp chopped fresh parsley
Parmesan cheese, grated
Preheat oven to 375 degrees F. Place sole in a single layer in a baking dish. Mix together cream of celery soup, cream, sherry, parsley and pour over fish. Sprinkle generously with freshly grated Parmesan cheese and bake for 25 minutes.
Variation: in place of Sherry use: 2 Tbsp apple cider or wine vinegar + 2 tsp sugar + 2 Tbsp water
