Grilled Cheese Sandwich and Tomato Soup


Grilled Cheese Sandwiches


4 slices bread

4 Tbsp. butter

8 slices cheese (cheddar or Velveeta)


Heat griddle to 325 degrees F.   Butter one side of each bread slice.   Place butter side down onto griddle and place 2 slices of cheese on each bread.   Cover with other 2 bread slices, butter side out.   Grill both sides until golden brown or cheese is melted through.   Heat Tomato soup, see below, until hot.   Dip sandwich in soup and eat.   One of Granny’s most favorite.



Tomato soup


6 oz. can tomato paste
3 cups milk

1 tsp sugar

1 tsp salt, to taste

1 avocado

½ tsp lemon juice


In a bowl mix tomato paste;   fill can up 4 times with milk and empty into bowl; blend well together.   Heat over medium low heat; add sugar and salt to taste.


Process avocado in blender until creamy; add lemon juice to prevent browning.


When soup it hot, remove from heat.   Fill bowls with hot soup and serve with a dollop of avocado.
