Granny’s Chicken Gravy

Granny’s Chicken Gravy


3 Tbsp butter or fried or roasted chicken drippings

5 Tbsp flour, all purpose

2 ½ cups chicken stock or use milk for a creamy gravy

Salt and Black pepper to taste


Melt butter in large saucepan or skillet over low heat.    Add 2 Tbsp flour, stirring constantly until color is golden brown, about 7 to 8 minutes.   Add remaining flour a little at a time stirring constantly.   Gradually add chicken stock or milk, stirring constantly until desired color and consistency. Continuous stirring is needed to prevent lumps from forming. Add salt and black pepper to taste.
Heat to a boil over medium heat, continue to cook for about 5 minutes, stirring occasionally until gravy thickens.



May sauté a small onion in with 1 Tbsp butter and add to gravy.


Use as much of the chicken drippings as you have and omit some of the chicken stock or milk used to equal the amounts needed, about 3 cups in all.


Use any variation of chicken stock and milk mixture….it is all up to you.


May use 2 cube chicken bouillon or 4 tsp chicken bouillon powder and 2 1/2 cups warm water in place of chicken stock…. Mix together bouillon and warm water, stir together until smooth.


May add a dash of cayenne pepper.
