Orange Ginger Prime Pork Rib Roast

 

2 to 3 lbs boneless pork rib end roast

¾ cup orange marmalade

2 Tbsps. lemon juice

½ tsp. dry mustard

 

Preheat oven to 325 degrees F.

 

Stir together orange marmalade, lemon juice and dry mustard; set aside.

 

In a roasting pan, brown boneless pork rib roast on all sides.   Remove from heat and add just enough water to cover bottom of roasting pan.   Baste with glaze and roast until internal temperature reaches 160 degrees F, about 1 ½ to 2 hours or so depending on your elevation.   Baste roast every 20 minutes or so.   When done remove from oven, let stand 5 minutes before slicing to serve.   Enjoy!  Serves 6 to 8 …with leftovers.
