Granny’s Chili Dogs

Granny’s Chili Dogs 

1 Tbsp vegetable oil
1 Tbsp butter
1 lb. lean ground beef
2 cups canned beans of choice, without juice
1 garlic clove, chopped finely
1/2 onion, finely chopped
2 Tbsp. chili powder
1 Tbsp paprika
1 tsp. sugar
1/2 tsp. ground cumin
1 tsp. salt
¼ cup tomato paste
1 cup beef broth
3 Tbsp. corn meal
1 bay leaves
10 hot dogs
10 hot dog buns
Shredded cheddar or your favorite cheese

Preparation:
Over medium heat melt butter and oil together; sauté garlic and onion about 6 to 10 minutes, until light golden. Add chili powder, paprika, sugar and cumin; cook stirring constantly for a few minutes.

Add ground beef; stirring occasionally, until browned nicely. Season with salt. Stir in beans, tomato paste, beef broth, corn meal and bay leaf; reduce heat to low and simmer until very thick, 20 to 30 minutes. Remove bay leaf.

Heat water and hot dogs, steam to perfection. Heat oven and broil hot dog buns to golden brown.

Serve up your hotdogs on the crispy buns, cover with hot chili, top with shredded cheese, onions and enjoy!

Makes 10 servings

Variation:
Use ½ lb lean ground beef and ½ lb ground pork.
Use masa harina in place of corn meal
For added flavor, lightly butter buns, sprinkle lightly with garlic salt then broil.
Spice it up with some jalapeño peppers…
