Granny’s Beef Stew and Dumplings

2 lbs beef, cubed
2 Tbsp lard or bacon fat
3 cups boiling water
1 Tbsp flour
2 Tbsp water
2 cups carrots, sliced thick
1 cup celery, sliced thick
2 small onions, cubed
1 cup peas or green beans
2 tsp salt
¼ tsp pepper
4 cups potatoes, cubed
Dumplings, see below

In large heavy sauce pan melt bacon fat over medium heat, brown meat. Deduce heat to low; add boiling water, cover and simmer about 1 hour and 15 minutes or so.

Blend flour and 2 Tbsp water to make a paste; add to thicken stew.

Over medium low heat add carrots, celery, onions, peas, potatoes and seasoning; cook about 30 minutes or so.

Drop dumplings by spoonfuls on stew and cook, covered, about 15 minutes longer. Serves 6


2 cups sifted flour
4 tsp baking powder
½ tsp salt
2 Tbsp butter
1 cup milk

Sift together flour, baking powder and salt. Cut in butter until crumbly. Add milk and stir until thickened. Makes about 12 dumplings
