Maseca Corn Bread

Maseca Corn Bread

¾ cup maseca
1 ¼ cup milk
1 cup flour
½ Tbsp baking powder
½ tsp salt
1/3 cup white sugar
1 egg
¼ cup veggie oil

Mix the milk and maseca. Let stand for at least 5 minutes. Mix dry ingredients. Mix corn mush, oil, and eggs into dry ingredients. Beat until smooth.

Pour into a greased 8×8 cake pan. Bake at 400 degrees F. for 30 to 35 minutes, until golden brown and a skewer comes out clean.

For a double batch:

1 1/2 cups maseca
2 1/2 cups milk
2 cup flour
1 Tbsp baking powder
1 tsp salt
2/3 cup white sugar
2 egg
1/2 cup veggie oil
