Banana Mandarin Cream Cheese Pie

 

1 Graham cracker crust:

2 cups graham cracker crumbs

¼ cup butter, soft

¼ cup sugar

 

Mix and press into pie plate.

 

Filling:

8 oz. cream cheese, soft

14 oz. Sweetened Condensed Milk

1/3 cup lemon juice + little extra for bananas

1 tsp. vanilla

3 bananas

11 oz. mandarin orange segments, well drained

 

In bowl, beat cream cheese until fluffy, gradually beat in milk until smooth.   Stir in 1/3 cup lemon juice and vanilla.   Slice bananas, dip in extra lemon juice, and set 1 sliced and dipped banana aside for top.

 

Line crust with bananas and about two-thirds of the oranges.   Pour filling over fruit.   Chill 3 hours or until set.   Top with remaining bananas and oranges.   Chill and serve.
