Cream of Turkey or Chicken Soup

Cream of Turkey or Chicken Soup

1 Tbsp. butter
½ cup chopped onion
2 cups hot water
2 chicken bouillon cubes
1 can carrots or 2 cups frozen carrots
1 can peas or 2 cups frozen peas
2 cups diced potatoes
1 cup cooked cubed turkey or chicken
1 Tsp. salt
½ Tsp. pepper
1 cup evaporated milk

Sauté onion in butter. Dissolve bouillon cubes in hot water or use 2 cups chicken stock. Add carrots, peas, potatoes, turkey salt and pepper. Simmer for 10 to 20 minutes. Stir in milk and heat through. Do not boil.

Use ham in place of turkey or chicken
Use spinach or kale in place of peas
Use mushrooms in place of carrots
Add sun dried tomatoes
Top with parsley or chives
Top with a dollop of sour cream
