Granny’s Meat Loaf

1 lb lean ground beef
2 eggs, beaten
1 cup oatmeal or saltine crackers
½ cup chopped onion
½ cup chopped celery
½ cup chopped tomatoes
½ cup chopped green pepper
1 shredded carrot
3 Tbsp. ketchup
chili powder, salt and pepper

Mix well, with your hands ground beef with veggies, oatmeal and place in loaf pan. Top with ketchup and spices. Bake at 400 degrees F. for 40 to 45 minutes.

Variations: top with BBQ sauce or cook without sauce and top with gravy.

Use any veggies of choice, spinach, corn, broccoli, Brussels sprouts, add mushrooms.

Bake in muffin tins for individual meat loafs for 15 to 20 minutes….
