Granny’s Carrot Marmalade

 

3 cups grated carrots

3 oranges

4 cups sugar

1/2 teaspoon ground ginger or cinnamon

4 cups water

3 Tablespoons lemon juice

 

Peel oranges, put peel through food chopper.   Cut pulp into small pieces and set aside.

 

Cook the peel in 4 cups water until tender.   Let stand overnight.

 

Add grated carrots and boil 10 minutes.   Add orange pulp, sugar and spice and then boil to jellying point.

 

Pour into hot sterile jars, wipe rim and seal with hot sterile lids and rings.   Process in full boil water bath 10 minutes.

 

Variation: may substitute 1 cup pineapple for 1 orange.
