Granny’s Buttermilk Oatmeal Muffins

1 cup buttermilk, see variation below
1 cup quick oats
1/3 cup butter
½ cup brown sugar, packed
1 egg, beaten
1 cup flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
¾ cup raisins
½ cup nuts, chopped

Preheat oven to 400 degrees F.

 

In a bowl soak oatmeal in buttermilk for 30 minutes. In another bowl cream together butter, brown sugar and egg. Sift flour, baking powder, soda and salt. Stir into creamed mix. Stir in raisins and nuts just until moistened. Stir in oatmeal. Spoon into greased muffin tins. Bake 20 minutes.

Variations:
use blueberries or cranberries in place of raisins…
use one cup of milk and 2 teaspoons vinegar in place of buttermilk
