Cookies n’ Cream Brownies

Cookies n’ Cream Brownies


1 cup butter

6 oz unsweetened chocolate, chopped

3 cups sugar

1/2 tsp salt

2 tsp vanilla

4 large eggs, room temperature

1 2/3 cups flour

1/3 cup unsweetened cocoa powder

3 cups Oreo type cookies, chopped roughly, about 18 cookies

3 or 4 more cookies, crushed finely


Preheat oven to 350° F.   Line a 9×13 baking pan with foil with edges overlapping for easy removal and grease lightly.


Over low heat melt butter and chocolate, stirring occasionally.   Whisk in sugar and salt.   Remove from heat and stir in vanilla; stir in eggs, one at a time, mixing fully between each egg.   Stir in flour and cocoa powder until well blended.   Stir in chopped oreo-type cookies and pour batter into prepared pan.   Crush 3 or 4 more cookies finely and sprinkle on top of batter.


Bake for 35 minutes, until toothpick inserted into center comes out with moist crumbs.


Cool brownies in pan for 30 minutes; lift out of the pan and place on cooling rack.   Cool completely then slice.   Makes 36 brownies or 48 bite-size brownies.
