Homemade Peanut Butter Cups


12 oz. chocolate chips

2 Tbsp shortening

3 doz. 1 inch paper cups

¾ cup creamy peanut butter

¾ cup sifted powdered sugar

1 Tbsp melted butter


Chocolate cups: Using double broiler, melt chips and shortening until smooth.   Remove from heat but leave over hot water.   Coat the inside of each cup with 1 tsp chocolate.   Place cups in palm of hand, rotating gently while pushing chocolate up sides with a spoon or rubber spatula.   Chill until firm.


Peanut Butter Filling:   In small bowl, mix peanut butter, powdered sugar and melted butter.   Form into small balls and place into chilled cups.   Press ball down to fill and spoon chocolate to seal edges.   Chill 1 hour.   Store in refrigerator.
